Eaker Barbecue is a Fredericksburg favorite built on grit, flavor, and a whole lot of heart.

Founded by Lance, a Uvalde, Texas native, and his wife Boo—known as the “Queen of Sides”—Eaker Barbecue started as a leap of faith in 2018. What began as cooking for friends quickly turned into a full-fledged food truck operation in Houston, where they honed their craft and built a loyal following.

In 2020, they made another bold move—relocating their family to Fredericksburg and bringing their signature barbecue to the Hill Country.

Today, Eaker Barbecue is known for its authentic Texas roots, rich smoky flavors, and a menu that reflects both tradition and personality. From perfectly smoked meats to standout sides, everything they serve is made with intention, experience, and a deep love for the craft.
